Insect Burger Recipe

Ingredients for 6 burger:

  • 0.5 kg blended worms
  • 200 gr. red beets
  • 200 gr. sprouted spelt
  • 2 white onions
  • 100 gr. breadcrumbs
  • 2 eggs
  • 3 cloves of garlic
  • 1 teaspoon smoked paprika
  • Seasoning: pepper, salt, nutmeg, thyme, rosemary, 1 tablespoon of chili powder


  1. Cut the beets into small cubes and bake them at 250 degrees. The baking time will depend on the size of the cubes; they should be cooked but not burnt.
  2. Finely chop the onions and slowly caramelize them in a pan over low heat with frequent stirring. Add crushed garlic 2 minutes before removing from heat.
  3. In a food processor, coarsely grind together the sprouted spelt, baked beets, and caramelized onions. Over-grinding will result in less structured burgers.
  4. Add the finely blended mealworms, breadcrumbs for thickening, eggs, and spices. Combine everything and mix well. Refrigerate overnight to allow the moisture to release.
  5. Shape the patties and bake them on parchment paper in the oven at 250 degrees until they turn golden brown. You can also carefully fry them in oil or lard.
