Nutritional content:
Protein (50%)
The animal protein content of this insect is similar to pork and beef, but boasts a higher proportion of essential amino acids. That is, those that the vertebrate body cannot make itself and must take in from the diet. Moreover, a full spectrum of these is available in edible insects.
Fats (25%)
The second most important item is fats, or lipids. Here too, insects contain higher proportions of essential ones than ordinary meat. Moreover, the optimum ratio of saturated to unsaturated fatty acids is also comparable to the meat of marine fish.
Carbohydrates and fibre (7% +7%)
Insect shells are built of chitin. Chitin is beneficial to health in many ways, lowering cholesterol, having antioxidant (anti-cancer) effects and has been shown to have a direct effect on the richness of the microbiotic flora of the colon and thus on immunity.
Minerals and vitamins
Insects are also generous in minerals and vitamins, containing iron, zinc, calcium, copper, phosphorus, magnesium, manganese and selenium, all with low levels of undesirable potassium and sodium. It also contains vitamins A, D, E, K and a large portion of the B-vitamin complex including vitamin B12.
